Almonds, mushrooms and cabbage over rice

This recipe is simple, satisfying, and highly nutritious.

Ingredients

  • 1/4 C. almonds
  • 10 white mushrooms, sliced
  • 1/4 of an onion, diced
  • 1/4 of a red pepper, diced
  • 3 cloves of garlic, minced
  • 1/2 C. cabbage, cut into narrow strips
  • 1/2 C. chard, cut into narrow strips
  • 1 small piece of ginger, grated
  • 1/2 C. sesame seeds
  • 1/2 tsp. tamari
  • 1/4 tsp. peanut butter
  • 1/2 tsp. miso
  • 1/2 tsp. parsley flakes
  • 1/2 tsp. dill

In a frying pan, saute almonds, mushrooms, onion, red pepper, garlic, cabbage, chard, ginger and sesame seeds until vegetables are hot and slightly softened.  Stir the remaining ingredients into a paste — you may need to add a little water — and add to the frying pan.  Serve over rice or noodles.  Feel free to add other vegetables such as snow peas, broccoli or string beans.
