Ambrosia
or “Food of the Gods/Goddesses” is the perfect food for summertime when there’s lots of ripe fruit around.
Ingredients
• 1 apple
• 1 pear
• 1 peach
• 1 plum
• 1/2 cup cherries
• 1/2 cup seasonal berries
• 1/2 cup shredded coconut
• 1/2 cup vanilla rice-, soy- or nut milk
• 1 tsp. maple syrup
Pit and cut fruit into small pieces, add berries and coconut and put into a large bowl. Combine milk and maple syrup and pour over the fruit. Let it sit for about an hour before serving so the flavours can mingle. Very refreshing on a hot day.
