An intuitive cook in Trail

It’s a bit of a frustrating experience for Nadia Matteucci’s children. The 78-year-old cook makes a fantastic spaghetti sauce but none of them know how to make it.

Nadia, who travelled from Italy to Trail in 1957, cooks “with a little bit of this and a little bit of that.” To make matters harder, Nadia won’t have children in the kitchen as she works.

Her daughter, Loriana, recalls being chased out and told to set the table instead. As a result, Loriana, now grown and with children of her own, still doesn’t know how to make her mother’s sauce. A sauce that doesn’t give the eater that reflux some sauces do.

Nadia jokes about her technique.

“Like Jesus Christ, you just go like that,” Nadia says, making the sign of the cross over an imagined pot of sauce.
