Avocado kiwi mandarin orange salad
This is a very hardy, nutritious and flavourful salad. It’s a hard season to eat locally grown, so it’s a good time to eat these delicious imported foods.
Ingredients:
• 3 ripe avocados, peeled and cut into small pieces
• 2 kiwi fruit, washed and cut into 8ths
• 2 mandarin oranges, peeled and sections divided
• 2 C. of spinach
• 1/4 C. sliced black olives
• handful of chives (or green onions)
• 1 tsp. of tamari
• 1 tsp. lemon juice
Combine all ingredients and serve immediately.
