Cardamom Cocoa

Cardamom adds so much to the flavour of cocoa.  It’s great with cinnamon sprinkled on the top.

Ingredients

  • 1 heaping tsp. cocoa powder
  • 1 tsp. sugar or maple syrup (more or less to taste)
  • 1/2 tsp. cardamom powder
  • 2 C. vanilla rice- or soymilk

In a saucepan, combine cocoa powder, maple syrup or sugar and cardamom powder with a small amount of the rice or soy milk into a creamy paste. Slowly stir in the rest of the rice or soy milk so there are no lumps.  Heat on low while stirring constantly.  Serve when it is just before boiling.

An easy way to make just one cup is to combine 1/2 tsp. cocoa powder, 1/2 tsp. sugar or maple syrup and 1/4 tsp. cardamom and a small amount of rice or soy milk in the bottom of a cup, then add 1/2 cup of rice or soy milk, then add boiling water.
