Cilantro Lavender Salad Dressing

This refreshing and unusual salad dressing features lavender and cilantro, both of which grow well locally.

Ingredients

  • 1/4 C. orange juice
  • 2 tbsp. lemon juice
  • 2 tbsp. lime juice
  • 1 tsp. lavender buds
  • 1/2 C. fresh cilantro
  • 2 tbsp. maple syrup
  • 1 1/2 tsp. minced hot peppers (or to taste)
  • 1 tsp. freshly grated orange zest
  • 1/3 C. champagne vinegar
  • 1/2 C. olive oil
  • 1 tsp. sea salt
  • 1 tsp. freshly ground black pepper

Bring orange, lemon and lime juice to a boil over medium heat and cook until reduced to 1/2 C.  Let cool for 15 minutes then transfer to a blender.  Add all other ingredients except the olive oil, salt and pepper then blend until smooth. Add olive oil until creamy.   Season with salt and pepper and blend.
