Glory Bowl

As a response to a recent post on my Redefining Beauty site, my very kind neighbours left me this recipe from Whitewater Cooks for their famous Glory Bowl.  I can hardly wait to try it!  Thanks, Chantal and Shane!

For two servings:

  • 2 C. cooked brown rice
  • 1/2 C. beets, grated
  • 1/2 C. carrots, grated
  • 1/2 C. almonds, toasted
  • 1/2 C. spinach leaves
  • 1/2 C. tofu, cubed

Dressing (enough for several servings plus extra for later!)

  • 1/2 C. nutritional yeast flakes
  • 1/3 C. water
  • 1/3 C. apple cider vinegar
  • 2 cloves garlic, crushed
  • 1 1/2 C. vegetable oil
  • 2 tbsp. tahini paste
