Glory Bowl
As a response to a recent post on my Redefining Beauty site, my very kind neighbours left me this recipe from Whitewater Cooks for their famous Glory Bowl. I can hardly wait to try it! Thanks, Chantal and Shane!
For two servings:
- 2 C. cooked brown rice
- 1/2 C. beets, grated
- 1/2 C. carrots, grated
- 1/2 C. almonds, toasted
- 1/2 C. spinach leaves
- 1/2 C. tofu, cubed
Dressing (enough for several servings plus extra for later!)
- 1/2 C. nutritional yeast flakes
- 1/3 C. water
- 1/3 C. apple cider vinegar
- 2 cloves garlic, crushed
- 1 1/2 C. vegetable oil
- 2 tbsp. tahini paste
