Mint potatoes

If you live in the Kootenays, you might still have potatoes you harvested from your garden and mint that you picked hanging dried on your wall.

Ingredients
•    4 medium sized potatoes, cut into eighths

•    2 green onions, chopped into small pieces
•    1/2 C. peas
•    1 handful of mint
•    ½ tsp. salt
•    black pepper
•    ½ C. milk or unsweetened rice milk

Boil potatoes in a pot of water until they’re thoroughly cooked.  Drain water, then mash in the rest of the ingredients.
