Mudpie Bars

This recipe comes from a the Green Cuisine cookbook, my absolute favourite restaurant.  If you’re ever in Victoria, check it out!  Their dessert bar is to die for.  This is one of their bestsellers.  Andy, the owner and author of this cookbook, recommends that you use top quality organic chocolate chips.

Ingredients:

  • 1 C. rice syrup
  • 1/2 tsp. vanilla
  • 1/2 C. peanut butter
  • 4 C. brown rice crispies
  • 1 1/2 C. pecans

  • 2 C. chocolate chips
  • 1 C. peanut butter

Bring the rice syrup to a boil, stir in the vanilla and peanut butter with a whisk then stir in the rice crispies and pecans.  Sprinkle half the rice crispy mixture into a glass pan 12 1/2″ long by 9″ side x 1 1/2″ deep.  Flatten out with moistened hands.  Melt the chocolate and peanut butter and stir with a whisk.  Pour over the base and sprinkle the remaining crispy rice mixture over the top.  Pat down lightly.  Refrigerate to set.
