Old red wine

Company’s gone, and we have holiday leftovers, including about a quarter bottle or so of red wine.  What to do?

Red wine makes a great addition to tomato spaghetti sauce.  Simmering mushrooms, onions and garlic in a little red wine, tamari and herbs enriches these ingredients that can be served over rice, or other grains such as quinoa, kamut or spelt.  And it does wonders for soups; some of the best soups I’ve ever eaten have been made by artfully combining leftovers, which you’re sure to have plenty of this time of year.

So don’t throw out that old wine — it’ll enhance many a post holiday season meal.
