Overindulged? How about a light soup?

All this eat, drink and being merry can leave us feeling a little under the weather — bloated, tired, stuffed…

What to do?  Apples, celery and salads are light and refreshing.  So is sushi.  One of my family’s favourite restorative foods is referred to as “sick soup” — the soup of choice when we’re not feeling our best.

Sick Soup

Ingredients:

•    4 C. water
•    1/2 C. noodles
•    1/2 block of tofu, cubed
•    4 cloves garlic, crushed and chopped into small pieces
•    2 green onions
•    1 tsp. kelp flakes
•    1/2 C. frozen peas
•    2 tbsp. basic soup base

Soup base

Miso soup base is added at the end of cooking the soup to keep the many nutrients in miso intact.  Combine the following ingredients in a cup with a bit of water:
•    1 heaping tbsp. miso
•    1 tsp. tamari
•    1/2 tsp. mustard
•    1/2 tsp. tamarind paste
•    1/2 tsp. cider vinegar
•    1/2 tsp. curry powder
•    1/2 tsp. parsley flakes
•    1/2 tsp. dill weed
Boil water, add noodles. When the noodles are cooked, add garlic, green onions, tofu, kelp flakes and frozen peas.  Remove from heat and add soup base.  This should help you and yours feel better.
