Pear Crisp

I’m still trying desperately to keep up with the abundance of the season, and today I noticed that there were pears that needed to be used. What to do?  Pear Crisp!  One of those delicious comfort foods that really hits the spot this time of year.  You can substitute apples, plums or any other fruit that’s taking over your kitchen.

Ingredients

  • 1 tsp. cooking oil
  • 5 medium pears
  • 2 tbsp. sugar
  • 2 tbsp. lime juice
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
Topping
  • 1/2 C. oatmeal
  • 1/2 C. flour
  • 1 tsp. cinnamon
  • 1/2 tsp. salt
  • 1/4 C. cooking oil
Preheat oven to 350 degrees.  Oil an 8″ square baking pan.  Peel and slice pears and put them in the pan.  Combine sugar, lime juice, cinnamon and salt and gently stir into the pears until they’re coated.  Combine all the ingredients that make up the topping, and spread over the pears.  Bake for 30 minutes, or until the pears are bubbling and the topping is slightly browned.
