Pumpkin Cookies

Does anyone else have frozen pumpkin left over from Hallowe’en? Here’s a recipe from the Kootenay Co-op for pumpkin cookies that makes use of the spices associated with this festive season – a great way to use up that leftover frozen pumpkin!

Ingredients

  • 1 C. unrefined sugar
  • 1 egg
  • 1 C. canola oil
  • 2 C. pumpkin
  • 2 C. unbleached flour
  • 2 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1/2 tsp. cloves
  • 1/2 tsp. allspice
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. baking powder
Preheat oven to 350 degrees C.
Mix all wet ingredients in a bowl. In a separate bowl, mix all dry ingredients. Fold dry ingredients into wet. Roll cookie dough into small balls. Place on cookie sheet and bake for 10-12 minutes.
