Winter Solstice Supper

It’s a stir fry! Using sunshine coloured veggies over Jasmine and wild rice.

Rice Ingredients

  • 1 C. Jasmine rice
  • 1/2 C. wild rice
  • 3 C. boiling water

Stir Fry Ingredients

  • 1/2 tsp. cooking oil
  • 1/4 onion, chopped
  • 3 cloves of garlic, crushed and chopped
  • 1/2 block of firm tofu, cubed
  • 1 small piece of ginger, finely grated
  • 3 carrots, diced
  • 1/3 yellow pepper, diced
  • 1/4 C. frozen corn
  • 1 tsp. Braggs
  • 1 tsp. kelp flakes
  • 1/2 tsp. rosemary
In a pot cook rice and boiling water until the rice is soft. Add water if needed.
Put oil in a hot wok or frying pan, and add all ingredients except frozen corn. When everything is completely cooked, stir in corn. Serve stir fry over rice immediately.
